The Rain and Potato Soup

I just love the soft pit-pat of rain on a tin roof. The cozy comfort of listening to the softly falling raindrops on the rooftop as you pull the covers up snugly on a lazy Saturday morning. I wonder if it comes from that early survival gene from our ancestors when they were constantly seeking warmth and comfort from predators and the elements. All I know is that I find it extremely satisfying to hear the rain, and to watch it falling softly on a dreary day. And to smell the freshly cleaned earth after a good rainfall.

I find joy in the simple things of life, and a softly falling rain is one of them.

I also like to enjoy a good bowl of homemade potato soup on a rainy day. So, here is my recipe for potato soup. I hope you enjoy it!

                                                                     POTATO SOUP

4 med. potatoes(peeled and diced)

1 small onion

2 cups milk

1 Tablespoon flour

2 teaspoons salt, 1 teaspoon pepper

one half stick of butter

Cook potatoes and onion with salt and pepper until soft, about 20 minutes. Drain potatoes, add flour to one cup of the milk and make a paste. Add to potatoes and onions. Add butter and stir. Then add remaining milk. Cook for a few minutes more until if forms the consistency that you want. Take off the stove and add it to your favorite cornbread. Enjoy!
